Biscoff ice cream sandwiches are absolutely divine! Imagine creamy, velvety ice cream sandwiched between two crisp and flavorful Biscoff cookies. The combination of the smooth ice cream and the caramelized, slightly spiced taste of the Biscoff cookies creates a perfect balance of textures and flavors. Ingredients

Biscoff Cookies (1 ½ sleeves)

14 oz. Cookie Butter Spread (Smooth or Crunchy)

1 2/3 cup Heavy Whipping Cream

7 oz. Sweetened condensed milk

1 tbsp vanilla bean paste

Pinch of salt

1 cup Wilton White Chocolate Candy Melts

¾ cup Biscoff Cookies (crushed)

Directions
Ice Cream Sandwiches
In a stand mixer, pour heavy whipping cream and beat on medium-high speed until stiff peaks. Add in sweetened condensed milk, vanilla bean paste and salt.
Fold in cookie butter spread until fully combined.
In a 9x9 baking pan, line it with parchment paper and place Biscoff cookies neatly as bottom layer of sandwich. Break off cookies as needed. *Save broken pieces to fill in gaps, once sandwiches are formed.
Pour ice cream mixture over bottom layer of cookies. Add additional cookies on top in the same pattern as bottom layer. Sprinkle cookie crumbs over gap areas as needed.
Freeze for 12-24 hours.
Ready to serve! *or proceed to white chocolate coating below
White Chocolate Coating and Cookie Crumble
In a small bowl, melt white chocolate candy melts in 30 second increments in microwave or melt in a ban marie on stovetop.
Coat ice cream sandwiches individually and then coat with cookie crumbles. Ready to serve!
